Shami Kobeba Salad Wraps

Ingredients:

  • 500g Seasoned Shami Kobeba
  • 4 large lettuce leaves or whole grain tortillas
  • 1 cucumber, thinly sliced
  • 1 tomato, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped fresh parsley leaves
  • 1/4 cup plain Greek yogurt or tahini sauce
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Place the Seasoned Shami Kobeba on a baking sheet lined with parchment paper.
  3. Bake in the preheated oven for 15-20 minutes, or until cooked through and golden brown.
  4. While the kobeba is baking, prepare your toppings and dressing. In a small bowl, mix together the Greek yogurt or tahini sauce with lemon juice. Season with salt and pepper to taste.
  5. Once the kobeba is cooked, remove it from the oven and let it cool slightly.
  6. To assemble the wraps, lay out the lettuce leaves or tortillas on a clean surface. Divide the sliced cucumber, tomato, red onion, mint, and parsley evenly among the wraps.
  7. Place a portion of the baked Shami Kobeba on top of the veggies on each wrap.
  8. Drizzle the yogurt or tahini sauce dressing over the kobeba.
  9. Roll up the wraps tightly, tucking in the sides as you go.
  10. Slice the wraps in half diagonally, if desired, and serve immediately.
