Chicken Mishkak Rice Bowl

Ingredients:

• 500g Seasoned Omani Chicken Mishkak Barbecue Cubes
• 2 cups cooked rice (white or brown)
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 1 onion, sliced
• 1 cup cherry tomatoes, halved
• 2 tablespoons chopped fresh parsley
• 2 tablespoons chopped fresh cilantro
• 1 tablespoon olive oil
• Salt and pepper to taste
• Lemon wedges for serving
• Optional: Greek yogurt or tahini sauce for drizzling

Instructions:

1. Preheat your grill to medium-high heat.
2. Thread the seasoned Omani Chicken Mishkak Barbecue Cubes onto skewers.
3. Place the chicken skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
4. In a large skillet, heat olive oil over medium heat. Add sliced bell peppers and onion to the skillet and sauté until they are tender-crisp, about 5-7 minutes.
5. Add cherry tomatoes to the skillet and cook for an additional 2-3 minutes, until they are slightly softened.
6. Divide the cooked rice among serving bowls. Top each bowl with the grilled chicken mishkak cubes and the sautéed bell peppers, onions, and cherry tomatoes.
7. Sprinkle chopped parsley and cilantro over the bowls, and season with salt and pepper to taste.
8. Serve the chicken mishkak rice bowls with lemon wedges on the side for squeezing over the top, and optionally drizzle with Greek yogurt or tahini sauce for added creaminess.
