Beef Mishkak Rice Bowls

Ingredients:

  • 500g Seasoned NZ Beef Mishkak Barbecue Cubes
  • 2 cups cooked rice (white or brown)
  • 1 cup diced pineapple
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • Optional garnish: sesame seeds, sliced green onions

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Thread the Seasoned NZ Beef Mishkak Barbecue Cubes onto skewers.
  3. In a small bowl, whisk together soy sauce, honey, sesame oil, minced garlic, salt, and pepper to create the marinade.
  4. Brush the marinade onto the beef skewers, ensuring they are evenly coated.
  5. Grill the beef skewers for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and has a nice char.
  6. While the beef is grilling, prepare the rice according to package instructions if you haven't already done so.
  7. In a large mixing bowl, combine the cooked rice, diced pineapple, diced bell peppers, thinly sliced red onion, chopped cilantro, and chopped mint. Toss everything together until well mixed.
  8. Once the beef skewers are cooked, remove them from the grill and let them cool slightly.
  9. To assemble the rice bowls, divide the rice mixture among serving bowls. Top each bowl with the grilled beef mishkak skewers.
  10. Garnish with sesame seeds and sliced green onions if desired.
  11. Serve the beef mishkak rice bowls hot and enjoy!
