Quick Butter Chicken
Hailing from Delhi, India, Butter Chicken is a popular and simple dish to make. You shouldn’t need to have a world of spices in stock, just a few popular numbers. The prep is simple, the procedure is straight forward and in just 30 minutes, you can be enjoying a delicious, home-made delight.
Ingredients
- Butter (use coconut oil for dairy free)
- Boneless, skinned chicken breast
- Olive oil
- Ginger
- Yellow onions
- Garlic
- Chicken stock
- Cinnamon
- Tomato paste
- Garam masala
- Turmeric
- Lemon juice
- Heavy cream (use coconut milk for dairy free)
Technique
Heat up a skillet adding a dash of olive oil, Sautee the onions, garlic and ginger for a few minutes until soft and onions lightly browned. Add the butter, chicken stock, tomato paste and all spices. Add diced chicken breast. Simmer until chicken is cooked. Add lemon juice and heavy cream, stir in and cook on a low temp for a further 3-4 minutes. Serve with basmati rice.

Creamy Tomato Chicken
This dish goes great with pasta as a main, or even on its own as a smaller meal. Again, nice, simple and just using one pan, creamy tomato chicken is a tangy, cheesy delight.
Ingredients
- Olive Oil
- Chicken breast (your preference on skinned, boneless)
- Fennel seed
- Garlic
- Red pepper flakes
- Crushed tomatoes
- Heavy cream
- Parmesan cheese
- Basil
- Kale
- Tomato paste
Technique
Heat your skillet, add a dash of olive oil. Once hot add the chicken breast and brown off then remove and place to one side. Add tomato paste, garlic, fennel seed, red pepper flake and then pour in the crushed tomatoes and simmer. Add the cream, parmesan and kale and simmer for a further five minutes before readding the chicken. Cook until chicken is done and serve. Top with basil and further lashings of parmesan.

Buffalo Chicken Bites w/ Blue Cheese Sauce
Rather than the Buffalo chicken wings, we prefer chicken bites. Great as a snack, or as part of a larger meal, these fiery little devils are both healthier than wing, and easier to make.
Ingredients
- Olive oil
- Cubed boneless, skinless chicken breast
- Buffalo sauce (Franks Red Hot Sauce, preferably)
- Butter
- Salt
- Pepper
- Garlic powder
- Onion powder
- Celery
- Blue cheese dressing
Technique
Heat the olive oil in a skillet. Add the cubed chicken breast and cook. When chicken is near complete add the butter, Buffalo sauce, salt, pepper, garlic powder and onion powder and coat all the chicken with the sauce. Serve with the blue cheese dressing as a dip, and celery sticks.
